The Simple Meals series was suggested by C on this site’s Facebook page, and I heartily agreed with his idea. Whether you’re living a smashingly busy life — running a business, working a day job or multiple day jobs, schooling, taking care of little ones, trying to manage your own mental or physical illness, or any combination of those things — the idea of downing a tumbler of whiskey and then tumbling straight into bed with no dinner is mighty tempting. After I shared the fiery pasta recipe a few weeks back, I realized that it might be nice to continue to share other simple meals that are nourishing, quick and easy to make, and downright comforting.

Today’s Simple Meal is Kale & Smashed Potatoes. I adore it because it combines so many of my favorite things, including starchy potatoes and the lovely, vivid green of kale. As with any of the Simple Meals shared here, please feel free to make your own additions or subtractions according to your personal diet or eating style.

Ingredients:

  • kale (any sort is fine)
  • fingerling potatoes
  • whole milk
  • salt and pepper
  • butter

Directions:

Boil the potatoes until they are soft. I believe this takes somewhere around twenty minutes, but usually I just go off and read until I remember that there are boiling potatoes, and that I must tend to them. Drain. Place in a baking dish or bowl (they won’t be going in the oven, so the dish or bowl needn’t be ovenproof.)

Mash the potatoes with a fork. Add as much milk as you’d like — I don’t use a lot.

Wash the kale. Feel how fun it is between your fingers. Tear it into little bits and add to the potatoes. Mix them up and add salt and pepper to taste.

Serve in bowls, or in your single favorite bowl, if you are alone. Eat and enjoy every bite. Think about the color of the sky.
